Cowboy was hungry…Real hungry. He had ridden two days from Utah and arrived in Dolores. His clothes were sweaty and dirty from the dusty ride. He did not want to go into the dining hall at the hotel.
Then Cowboy spotted a wagon on the side of the road with a fire going outside. Cowboy could smell the aroma of fresh brewed coffee and carne asada cooking on the grill. A sign said “Beto’s Chuck Wagon”. Cowboy swung down off his horse and asked Beto for a heaping plate of Mexican food. Beto obliged with a plate of delicious cooked meat, Mexican frijoles, fresh tortillas, and Mexican Rice. Beto’s daughter, Nanny, just smiled as Cowboy wolfed down the meal. Cowboy spoke up “Beto, you make the best Mexican food north of Santa Fe” Nanny brought Cowboy some sopapillas with honey for dessert.
